Afternoon Tea Recipe

Tea Set An afternoon tea recipe does not have to be difficult. You may like to try this one.

These egg tea sandwiches can be made using any type of thin bread.

If you like you can cut the sandwiches into triangles or cut the edges off the bread.

Ingredients

  • 12 thinly sliced pieces of bread
  • 8 large eggs
  • 1/3 cup mayonnaise
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon chopped green onions
  • 1 teaspoon mustard
  • Salt and white pepper to taste

Directions

    1. Add water to a medium size pot and let boil. The water should fill the pot halfway, enough to cover the eggs.

    2. Very carefully add eggs to the pot.

    3. Lower the heat and cook the eggs for approximately 20 minutes.

    4. When cooked, drain and let the eggs cool.

    5. When the eggs are cool, peel off the shell and chop the eggs.

    6. Put the chopped eggs in a medium bowl and add the mayonnaise, relish, green onions. mustard and salt and pepper (to taste).

    7. Mix well, cover and place in the refrigerator to chill for 1 hour. Keep in longer if necessary.

The tradition of afternoon tea is a joyful one for me. My father would make us little sandwiches and serve them to us outside while we had a picnic on the lawn.

The neighborhood kids thought it was the greatest thing to have tiny sandwiches. I think that was the beginning of my love of having afternoon tea.

You can customize this afternoon tea recipe to your liking. If the kids like peanut butter and jelly, that works.

My niece went through a period when she was younger of only putting jelly on one side of the bread. On another slice would be peanut butter. Then the two sandwiches could be placed together.

According to my niece, placing jelly on a piece of bread and adding peanut butter to the same slice on top of the jelly is not proper and just the wrong way to make the sandwich.

I have actually had to remake sandwiches for her according to her "right" way. I smile looking back but at the time it could be a bit trying. Kids:)
