Well, imagine you are in New York City and wandering around the narrow streets of Greenwich village.  You see a very small but crowded shop.  What is it and why are so many people there?

It is the local tea shop and people are browsing. It is a favorite place among the locals and mixing and matching different tea is encouraged. The smells are mind boggling.

Well, there are various types available to purchase and drink.

There are several methods used to process tea according to the kind being produced, such as green, white and black.

The following are some of the processing methods:

  • Rolling
  • Withering
  • Oxidation
  • Drying
  • Grading

White

  • It is made from buds and young leaves of the tea plant.
  • They are steamed or fired to inactivate polyphenol oxidase (process that gives tea its color), and then dried.
  • It is the least processed.

Green

  • Green tea is made from more mature leaves than white.
  • The leaves may be withered prior to steaming or firing and undergoes minimal oxidation.

Oolong

  • Oolong teas are “bruised” to allow the release of some of the polphenol oxidase present in the leaves.
  • Oolong are allowed to oxidize to a greater extent than white or green teas, but for less time than those for black. They are also heated and dried.

Black

  • These leaves are fully rolled or broken to maximize the interaction between catechins and polyphenol oxidase (process that gives the color).
  • It is dried by the process of withering and undergoes the most processing.
