They need to keep their original color and taste, which is the way most people prefer it.

Black tea is fully fermented. This is the only way to give them the strongest flavor, and the flavor lasts much longer.

Oolong tea is one which undergoes a partial fermentation. This type of tea is unique in the fact that it contains the characteristics of both green tea and black tea.

The flavor is a bit different. This tea makes for an excellent middle ground.
